Green Beans with Herbs and Feta
serves 4
Ingredients
- 1 lb green beans, cooked, optionally cooled
- 1/4 C olive oil
- 4 T mint, torn
- 2 T dill, chopped
- 2 T lemon zest
- 2 T lemon juice
- 2 oz feta
Instructions
- Whisk together the oil, 2 T mint, 1 T dill, 1 T lemon zest, and 1 T lemon juice. Season to taste, then toss the beans in the dressing.
- Plate, garnish with the remaining spices and feta, and serve.
